2nd shift 

 

Position Purpose 

Responsible for shaping and verifying the raw dough pieces on the Sheeter line are formed in accordance with the product specifications.

 

Key Accountabilities

The Operator 3, Bakery - Sheeter is responsible to assure that scheduled budgeted pounds are completed while maintaining waste control.

Responsibilities

  • Monitor and control efficiency of Sheeting Line to assure that dough mixes do not exceed the capacity
  • Assure when specifications allow reuse of waste dough from the Sheeter Line that it is incorporated back into the dough mixes by percentages allowed.
  • Assure the weight scales are functioning accurately.
  • Verify floor batch time to assure dough is acceptable for forming units.
  • Verify texture and temperature of dough to assure product units will develop through the process system as expected.
  • Set and verify that the process line control parameters are to specifications.
  • Continually monitor controls to ensure that product is to specifications.
  • Assure that flour dusters are maintained filled at all times.
  • Verify that targeted units per proofer plates are to target specifications.
  • Assure that mechanical line moving parts are functioning as expected. Report any mal-functioning or potential mechanical failures to supervisor.
  • Assure that the Sheeter Line, workstations, are maintained organized and safe for working.
  • Assure that Good Manufacturing Practices (GMP's) are adhered to by employees.
  • Continually communicate with Supervisor on dough conditions and quantity.
  • Record Quality Control checks accurately and timely.
  • Continually weigh units to ensure product is within weight specifications.
  • Additional tasks may be assigned as needed.
  • Works to maintain and improve on the quality, legality and safety of each product and the processes used in their manufacture. Responsible for keeping assigned work area clean and tidy at all times and reporting any potential contamination and suspicious activity to a Supervisor immediately.

Education, Technical Qualifications, Experience and Competencies Proficiency Level

Required

  • Ability to understand and operate mixing process controls and makes adjustment when necessary.
  • Basic knowledge of dough mixing and operating mixing equipment
  • Ability to comprehend scale and temperature readouts
  • Ability to document mixing and ingredients data accurately and timely
  • Math Ability - Ability to add, subtract, multiply, and divide.
  • Reasoning Ability - Ability to define and solve problems.
  • At least 6 months as an Ingredient operator or related experience
  • Ability to write clearly and legibly and possess basic effective verbal and written skills in English.
  • Oral Communication - Speaks clearly and persuasively in positive or negative situations; listens and gets clarification; responds well to questions; participates in meetings.
  • To perform this job successfully, an individual should have the ability to work with computers and operating screens.

Preferred

  • Bilingual English and Spanish
  • High School Diploma or GED

  • This position requires the employee to stand for extended periods of time, have manual dexterity/use of hands and fingers, have the ability to reach with arms and hands, and have the ability to work in an enclosed environment.  With the aid of co-workers, the employee is expected to frequently push/pull from 10 to 30 pounds.  The employee is expected to carry, twist, bend, and stoop in conjunction with frequent lifting between 10 and 100 pounds of supplies and trash with the aid of co-workers.  This position requires the employee to lift and dump up to 50 pounds.
  • This position requires employee to have adequate communicating and observational skills, including seeing, speaking and hearing, due to the operation of various types of moving equipment used in the bakery.  These requirements are for the safety of the employee and co-workers.  These requirements are also necessary for collecting, distributing and communicating information with co-workers.  Specific vision abilities required by this job include close vision, distance vision, depth perception and color vision.

  • While performing the duties of this job, the employee is frequently required to work near moving mechanical parts. The employee is regularly exposed to extreme hot (non-weather) conditions and to changes in temperature, and occasionally exposed to hot or humid conditions (non-weather) and extreme heat (non-weather).  The employee must be able to tolerate a work environment that contains flour dust. The noise level in the work environment is usually moderate but can get loud.
