Title: Lead Oven Baker 

 

The Lead Oven Baker has the responsibilities for planning, organizing, directing, and coordinating activities at the Proof Box and Oven. The Lead Baker will assure that Oven and Proof Box processing control setting are set to product specifications: Bake time, Oven and Proof temperatures, Oven and Proof speeds, humidity and temperature, Oven dwell time, etc. The Lead will continually monitor and control; bake texture, color, dwell bake time and product quality. The Lead will communicate effectively with the Rheon Line Operator for challenges encountered with quality, mechanical, or the process systems efficiency and effectiveness.

 

MAJOR ROLES AND RESPONSIBILITIES: 
1 Aware of product scheduled to be baked for setting baking control parameters.
Set process controls for Oven and Proof Box to product specifications.
2 Assign Bakers to workstations. Continually monitor quality of product on the Proof Box plates that will receive their final shaping before going into the oven. Continually monitor units that have been given their final shaping for product specifications: length, height, volume, texture, plate count, and cutting of units to specifications.
3 Continually monitor color of units exiting oven for color specifications. Assure Bakers have sharp blades for cutting units and disposing of blades in their proper place. Maintain an accurate count of blades issued to the oven employees. Continually communicate with Rheon Line Operator to maintain process control of the processing systems and product quality.
4 Monitor that conveyor transfer sensors are synchronized for transferring product from transfer belt to the next transfer belt. Assure that excess buildup of dough on the bridge conveyor rollers is removed as needed.
5 Assure that transfer conveyor belts are maintained free of dry dough buildup.
Monitor and control cooler conveyor speed to freezer.
6 Assure that product units are aligned correctly on the cooling conveyor for maximum freezing.
Maintain the oven and proffer areas clean and safe for performing job tasks.
7 Additional tasks may be assigned as needed.
8 Works to maintain and improve on the quality, legality and safety of each product and the processes used in their manufacture. Responsible for keeping assigned work area clean and tidy at all times and reporting any potential contamination and suspicious activity to a Supervisor immediately.

JOB REQUIREMENTS:

Education:  High school diploma or general education degree (GED)

Ability to perform job function’s with minimal supervision. Ability to execute sound decisions when confronted with a processing, chemical, or employee challenge. Comprehension of GMP’s and Lockout/Tagout Procedures. Effective communication, verbal and written (English). Ability to comprehend basic verbal and written instructions (English). Basic math skills (Addition-Subtraction-Multiplication-Division). Ability to write clearly and legibly. Assure that documents are recorded accurately and timely. Perform well under pressure and time constraints. Ability to be clear and precise in giving direction and instructions to subordinates. Comprehension of oven process controls for executing adjustments as needed.  Ability to consistently meet daily targeted baked product parameters. Ability to function as a Team Member. Demonstrate professionalism when interfacing with management and employees. Be aware of all quality and safety requirements.
